
Including fish in one's diet is a surefire way of keeping oneself healthy. Fish as the main course might seem boring for a meal. This is why Spanish Zarzuela, a traditional Catalan fish stew, should be included in your gamut of seafood recipes.
Mussels, shrimp, and squid must be prepared. Approximately a pund for each ingredient will do to serve 4 people. 2 pounds of fish fillet are also needed. The fillets must be firm and sliced in large quantities. Next, cut a large piece of onion, half a pound of bacon, and two pounds of peeled sliced tomatoes. Have sliced almonds at hand.
The onion should be sauteed in half a cup of olive oil. Bacon, tomato, almonds, and garlic will be added next. Salt, fresh ground black pepper, some safran, 2 laurel leaves will also be included in the mixture. Heat the mixture until most of the liquids have evaporated. Then, add another half cup of olive oil, half cup of dry red or white
wine, and 1/2 cup of lemon juice. Add the fish and steam for 8 minutes on low heat. Add the mussels and shrimps last and let steam for another 2 minutes.
Serve the dish with stick bread.
