Here is a healthy shrimp recipe that you can try. This is called Garlicky Portuguese Shrimp.
You will need the following ingredients:
3 Tbs olive oil.
1/4 cup minced garlic
2 cups thin sliced red onions
2 cups thin sliced white onions
1/2 cup diced red bell pepper
8 tomatoes cut into thin wedges
salt & pepper
2 pounds raw cleaned shrimp
2 cups tomatoe juice
1/2 cup chopped spring onions
1/4 cup chopped parsley
1/4 cup chopped cilantro
Warm the oil using medium high heat. Add garlic and onions then saute for five minutes. Add peppers, tomatoes, salt and shrimp. Cook the mixture while tossing for five minutes. Now, add tomato juice and spring onions. Allow to simmer. Finally, add parsley and cilantro, cook for one minute. Ideally, this dish should be served hot.
