Careful diet monitoring will ensure good health. There are diseases such as diabetes mellitus that are completely preventable if you practice correct diet regimen. Here is a relatively healthy recipe called Stuffed Catfish. You will need the following ingredients:
4 farm-raised catfish fillets, fresh or frozen and thawed, about 1 1/2 pounds
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon lemon juice
STUFFING
1 cup fresh soft
bread crumbs
3 tablespoons light cream cheese
2 teaspoons lemon juice
1 tablespoon chopped celery
1 tablespoon chopped onion
1 teaspoon dried parsley
1 teaspoon ground thyme
1/2 teaspoon salt
1/4 teaspoon pepper
8 slices bacon
Season the fish with salt and pepper. Sprinkle some lemon juice. Combine the bread crumbs, cream cheese, lemon juice, celery, onion, parsley, thyme, salt, and pepper. This will serve as the stuffing. Divide this into four portions. Roll the fish fillets to wrap the stuffing. Fry the bacon, but do not allow it to be crispy. Use two bacon strips to wrap each catfish fillet. You may use toothpicks to secure the fillets and bacon strips. Bake for about 20 minutes at 30 degrees Fahrenheit. Serve
fish fillets with lemon wedges as desired.
