The ingredients are easy enough to find, and the instructions are cleverly simple:
1 and 1/3 cps of water
2/3 cp of long grain rice
Dough for double crust pie, 9 inch
2 med onions, sliced thin
1/4 lbs of fresh mushrooms, sliced
1 tbsp of butter (margarine ok)
1 (10.75-oz) can of condensed cream of mushroom soup
2 (7.75-oz) cans of salmon, drained and flaked
2/3 cp of cheddar cheese, shredded
Monday, April 23. 2007
In a medium saucepan, boil water, stir in rice, reduce to a low simmer, and cook for 18-20 minutes, or until water is absorbed fully. Take lid off, then fluff with fork lightly and set it aside. Preheat the oven to 450 F (230 C). Line one pie plate with bottom pastry and set it aside. In a large saucepan over medium heat, saute onions and mushrooms in butter. Combine cooked rice with mushroom soup and spread half of the mixture on the bottom of the pie shell. Spread the salmon on the rice mixture. Top with sauteed mushroom and onion mixture, then top with what's left of the rice mixture. Sprinkle with cheese, then cover with top pastry. Seal the edges and make some slits in the top crust to allow steam to evaporate. Bake at 450 F (230 C) for ten minutes. Reduce heat to 350 F (175 C) and continue to bake for 35 minutes or until golden brown. Set Salmon Pie for 5 to 10 minutes before serving.

One notion that people have about gourmet restaurants is that these establishments serve as little fish as possible. This may be possible in one sense. I mean, how could you imagine a rich person dissecting and maneuvering his flatware about a large fish on his plate, right?
As such, we only have an idea that the expensive caviar is the only seafood wanted in these restaurants. But, fish like cods are also being served in gourmet restaurants. It is just a manner of presenting it with gourmet ingredients. Take for instance, Cod Au Gratin. Who have thought that all that is needed is an uncommon kind of cheese and it's good to go? Look at how it is made.
-celery stick (that is diced)
-diced carrot
-sliced onion
-bay leaves (a couple of them)
-1 and 3/4 pots of water
-2 lb. fresh cut, divided into 4
-13 oz. white sauce (one that is heated)
-4 oz. Gruyere cheese
-parsley sprigs
-salt
-pepper
Cook the seasonings and vegetables in a pan, then add water. Boil mixture over the medium heat. After a few minutes, place the cod in the pan and make sure it is covered by the water. Cook over the low heat for 8 minutes. Remove fish and after draining it well, transfer it to a buttered baking dish. Pour sauce over the fish and sprinkle with grated cheese. Place the fish dish in the oven and grill for 5 minutes. Voila! Cod Au Gratin is ready to serve.

My older brother works as a seaman and it's usually aboard the ship that he gets to try his favorite shark dishes. He learned a few recipes, which he shares with me every time he would come home for vacation.
1 1/2 pound Shark Steaks
2 Tbsp Soy Sauce
2 Tbsp Rice or Wine Vinegar
2 Tbsp Lemon Juice
2 Tbsp Oil
2 Tbsp Parsley, chopped
1 clove Garlic, pressed
freshly ground Black Pepper
Green Onions, minced
Parsley, minced
Start by cutting the shark steaks into six portions, then place them in a glass dish. Combine the soy sauce, vinegar, lemon juice, oil parsley, garlic, and black pepper and pour the marinade over the steaks and marinate for half an hour, turning at least once. Then remove the shark steaks(reserving the marinade) and broil for 4 to 5 inches from the heat - about four minutes for each side and brush with the marinade before turning, but do not overcook. Serve over steaming rice and drizzle a dash of minced green onions and parsley atop each steak, and you can serve with tossed salad and sourdough bread. You can make a total of six servings of Marinated Shark Steaks.

Fish oil is extracted from the tissues of oily fishes and is often recommended as part of a healthy diet program. Many nutritionists recommend that we eat fish at least once a week. However, emphasis must be placed on the importance of avoiding fish that contain certain harmful contaminants. Predatory fish, such as sharks, have unhealthy substances in their body which can accumulate due to the fish's different predatory lifestyle.
It is thought that fish oil has many health benefits which become a major problem to many individuals who take too much fish oil which leads to serious complications. Daily intake of fish oil can be beneficial for patients suffering from coronary heart disease as it helps regulate cholesterol. Fish oil is also recommended to prevent cardiovascular diseases and high blood pressure, but high levels of omega-3 fatty acid intake may increase the risk of dangerous side effects, including a stroke. Fish oil is also available in many locations as dietary supplements but purchase requires a doctor's prescription in certain cases. Be sure to read the label and/or instructions carefully before using any medication and/or dietary supplement like fish oil because improper use can have serious effects.

It is very seldom that I do swordfish recipe because I rarely find one. Thanks god for my sister who works as a chef; I get tons of recipes almost every week in my email. In one of your barbecue Saturdays, you can try grilled swordfish recipe for a change.
1/2 cup white wine
5 cloves garlic, minced
2 teaspoons chopped fresh rosemary
4 (4 ounce) swordfish steaks
1/4 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons lemon juice
1 tablespoon extra virgin olive oil
4 slices lemon, for garnish
In an 8 inch square baking dish, stir wine, garlic, and 1 teaspoon rosemary together then sprinkle fish with salt and pepper and place in the baking dish turning to coat, then cover and refrigerate for at least 1 hour. Stir together the lemon juice, olive oil, and remaining fresh rosemary in a small bowl and set aside.
Then preheat the grill for medium heat. Transfer the fish to a paper towel-lined dish and discard marinade, then lightly oil your grill grate to prevent the fish from sticking on the grill. Grill the fish 10 minutes, turning once or until fish can be easily flaked with a fork. Then remove fish to a serving plate and spoon lemon sauce over the fish. Top each fillet with a slice of lemon for garnish. This recipe can make four servings of Grilled Swordfish with Rosemary.

My family love this dish so much for its melted cheese and soft potatoes and it's also a good way to get calcium in your healthy diet.
2 pounds russet potatoes, peeled and cubed
1 cup 1% milk
4 ounces shredded mozzarella cheese
3 tablespoons grated Parmesan cheese, divided
2 eggs
3 (6 ounce) cans chunk light tuna in water
1/2 cup chopped green onion
First, preheat oven to 400 degrees F (200 degrees C).
In a large cooking pot over high heat, place the potatoes with water to cover and then bring to a boil for about 20 minutes, or until potatoes are tender. Then drain and transfer potatoes to a large bowl, and add the milk, mozzarella cheese and 2 tablespoons of the Parmesan cheese.
Beat the potatoes using an electric mixer until almost smooth. Then beat in the eggs and drain the tuna then stir the tuna into the potato mixture, and stir in the green onion and season with salt and pepper to taste.
Then transfer mixture to a lightly-greased 10-inch diameter glass pie dish and top with the remaining Parmesan cheese. Bake it at 400 degrees F (200 degrees C) for about 45 minutes or until golden brown.

I'm sure anytime soon the pizza delivery guy will be bringing you this new variation of pizza, or you can make one on your own.
For the crust, you'll be needing:
2 cups Flour and all-purpose
1 teaspoon salt
1 teaspoon granulated sugar
2 teaspoon of yeast
1 teaspoon olive or vegetable oil, one tablespoon
3/4 cup of warm water
For the toppings get ready with:
1 large tomato, chopped
1 to 2 cloves of garlic, minced
6 to 8 green onions, chopped
2 tablespoons of fresh dill
2 cups Asiago Cheese, grated
4 ounces smoked salmon, cut into bite-size pieces
1 tablespoon capers, drained
ground black pepper to taste
In preparing the dough, mix one cup of the flour, salt, sugar and yeast in a large bowl then pour oil into water, add to yeast mixture, and mix thoroughly. Next, add the remaining flour and knead for three to five minutes on a floured surface. Put in a greased bowl, then cover and place in a warm spot for 40 minutes or until needed. The dough can be made in the morning and kept in the refrigerator cold, just let it warm up for about one hour before using. Stretch the dough out on an ungreased medium pizza pan or cookie sheet just before you are ready to assemble the pizza. Meanwhile, preheat the oven to 475F. Using a small bowl, mix tomato, garlic, green onions, pepper, and dill. Spread this mixture directly on pizza crust and sprinkle Asiago cheese on top. Bake for ten to twelve minutes on oven's lower rack. Remove from oven and spread smoked salmon and capers on top and return to oven for three minutes. It makes a delicious eight slice pizza.

I have always been fond of anything that's grilled. I like to have a regular healthy diet, so, it's best when my food is grilled. Fish is also a good food source. You can never go wrong with servings of fish everyday.
There are countless ways to cook fish and there are countless fish to cook. My recent discovery is the grilled bluefish fillet. It's very easy to cook as long as you have your reliable grill by your side. You only need:
- 2 pounds of bluefish (fillet)
- a half cup of ketchup
- a quarter of melted butter
- three tbs. of lemon extract
- two tbs. of vinegar
- one tbs. of salt
- one tbs. of Worcestershire
- one clove of chopped garlic
- a quarter of paprika
- a half tbs. of grated onion
- a half tbs. of mustard
- two to three drops of pepper sauce
Then, you simply put your layer of fish in a pan. You mix all the ingredients and then you pour it over your layer of fish. You have to marinate your fish for half an hour before turning it. You drain your fish and then you place it on your heated grill. Cook your fish for about 7 to 8 minutes, tops. Don't forget to put your marinate on the fish, every once in a while. Turn your fish once the other side is done. As easy as that, you already have your grilled bluefish fillet.
